Which bottle is Sider frå Hardanger

The protected name is fermented cider, and the classes start at 3 percent. A bottle marked alkoholfri, or eplemost, is not that name.

The table

The regulation of 17 April 2009, FOR-2009-04-17-420, made by Mattilsynet, protects the name Sider frå Hardanger. The cider is made from apple juice, råsaft, which may have sugar added. It has fermented on wild yeast from the apple peel, or white-wine yeast has been added. Table 1 splits the alcohol in three. Low is 3–4.75%. Medium is 4.76–8.99%. High is 9–12%. Each may be dry, at most 20 grams of sugar per litre, medium, from 20 to 40 grams, or sweet, from 40 to 80 grams.

Apple concentrate is not used. The regulation's sentence is «Eplekonsentrat skal ikkje nyttast.»

Beskyttede betegnelser writes that Sider frå Hardanger was the first alcoholic product given a protected geographical indication, and that both Sider frå Hardanger and Sider frå Sogn have a protected name in Norway. The page is dated 19 June 2023. The Sogn regulation, FOR-2025-11-17-2283, came into force on 17 November 2025. Vinmonopolet, Anders Stueland, updated 18 August 2026, still writes that only Sider frå Hardanger is tied to a delimited area. The article was updated after the Sogn regulation came into force, and it does not mention Sogn. The numbers in the Sogn table do not belong on a Hardanger bottle.

The seven kommuner

The regulation names Eidfjord, Granvin, Jondal, Kvam, Odda, Ulvik and Ullensvang. The apples, the pressing, the fermentation and the storage happen there.

Taste Hardanger writes Ullensvang (formerly Odda, Jondal and Ullensvang) and Granvin (part of Voss municipality since 1 January 2020). That is their sentence. The regulation, as it stands on Lovdata, still names the seven.

The same page also writes wine, beer and cider yeast. The regulation names wild yeast from the apple peel, or white-wine yeast.

The label

The label names the apple varieties, the sweetness and the alcohol. If carbon dioxide is added, the label says so. A bottle kept longer than one year after bottling is marked «Lagra sider».

Hardanger Saft og Siderfabrikk in Ulvik writes that the farm has a large production of eplemost and cider. The two drinks from the same farm do not put a 0% bottle inside the protected name.
